Caprese Sandwiches

4 focaccia squares, sliced in half

Arugula

1 ball of fresh mozzarella, sliced

2 tomatoes, sliced

Basil leaves

Extra-virgin olive oil, for drizzling

Put together the sandwiches on the focaccia by adding the arugula, mozzarella, and tomato slices. Top with basil leaves, a drizzle of olive oil. You can season them with salt and pepper if you desire and even take them to the oven for a crispy feeling. Pack them into your basket and you’re ready to go!

Cantaloupe Energy Shot

2 cups of cantaloupe, diced

1 cup of water

1 sachet of FENIX CXT

Ice

In a large pitcher mix the water with the CXT powder until dissolved. Then, add the cantaloupe.. Bring to your fridge and let it chill for 2 to 3 hours before going out to your picnic. Serve cold!

Spore Balsamic Salad

¼ cup balsamic vinegar

1/2 teaspoon of ORGANO spore powder

1 cup cherry tomatoes, halved

1 cup mini mozzarella balls, halved

1 avocado, pitted and diced

⅓ cup pecans

⅓ basil, torn

Extra-virgin olive oil, for drizzling

In a small saucepan, bring the balsamic vinegar to a high simmer over medium heat. Stir, then reduce the heat to low and simmer until the vinegar has thickened and reduced by half. Once it is ready, bring off the stove and add the spore powder, mix well and set aside to cool.

Place the cherry tomatoes, mozzarella, avocado, pecans, and basil in a bowl, mix them and drizzle with olive oil, reduced balsamic, and season generously with salt and pepper.

CXT Citrus Jelly

1 stick of FENIX CXT

1 package of sugar-free jelly of your favorite flavor, we suggest orange

2 cups water

Pour the jelly powder into 1 cup of boiling water and mix. In a different container, mix FENIX CXT™ with 1 cup of cold water. Mix both liquids together and pour into four jelly molds. Let it rest in the fridge for at least two hours.
