Shamrock Coffee Cake

For the cake:

2 cups all-purpose flour

1 cup sugar

1/2 cup unsalted butter, at room temperature

2 eggs

1/2 cup of cool ORGANO Black Coffee

1/2 cup buttermilk

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

For the streusel topping:

1/4 cup all-purpose flour

1/4 cup brown sugar

1/2 teaspoon ground cinnamon

2 tablespoons unsalted butter, at room temperature

Green food coloring (optional)

Instructions:

Preheat the oven to 350°F. Grease a 9-inch cake pan and set aside.

In a large bowl, cream together the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each addition. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

In another bowl, stir together the cooled OG Black Coffee, buttermilk, and vanilla extract.

Add the dry ingredients and coffee mixture to the butter mixture, alternating between the two, beginning and ending with the dry ingredients. Add a few drops of green food coloring if you decide to use it.

Pour the batter into the prepared cake pan.

In a small bowl, mix together the flour, brown sugar, and cinnamon for the streusel topping. Add the butter and mix until crumbly. If desired, add a few drops of green food coloring to the streusel topping.

Sprinkle the streusel topping evenly over the cake batter.

Bake the cake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Serve and enjoy!
