Cake… that sweet treat that makes our days! Whether you want to celebrate something or just want a treat for that afternoon, we want to give you a few ideas on how to incorporate our coffee into these delicious baked goods. Choose your favorite and give it a try this month!

Coffee Muffins

Muffins

1 1/2 cup all-purpose flour

1/2 cup light brown sugar

2 tsp baking powder

2 sachets of King Of Coffee

1/4 tsp baking soda

1/4 tsp salt

3/4 cup milk

1.5 tsp vanilla extract

1/3 cup vegetable or canola oil

2 large eggs

Crumb topping

1/3 cup granulated sugar

1/3 cup packed light brown sugar

1 tsp ground cinnamon

1/4 tsp salt

 

Preheat your oven to 375 degrees F and line your muffin tin with paper cups and set aside.

 

First prepare the crumb topping: 

In a mixing bowl mix the granulated sugar, brown sugar, cinnamon, salt and flour. Then, add the melted butter and mix in until it all comes together. The mixture will resemble coarse crumbs.

 

Now for the muffins: In a big bowl mix together the flour, brown sugar, baking powder, baking soda, King of Coffee, and salt. In a medium bowl, whisk the eggs, milk, oil and vanilla extract. Add the wet ingredients to the dry ingredients and stir them up with a wooden spoon until combined, don’t over mix or your muffins will be heavy and not fluffy!

 

Scoop the batter into the muffin tin, filling each cup about 3/4. Sprinkle the topping on top of the batter of each muffin.

 

Bake the muffins for 15 to 20 minutes until fully cooked. Remove from the oven, let the muffins cool in the pan for 10 minutes, then transfer onto a cooling rack. Serve once they are cold!

 

Coffee Pound Cake

1 cup flour

1/2 cup sugar

1/2 tbsp baking powder

1 sachet of ORGANO Gourmet Black Coffee

1/2 tsp of salt

4 egg yolks

1 tbsp of Gourmet Black coffee dissolved in 1/4 cup hot water

1/4 cup olive oil 

4 egg whites

1/4 tsp cream of tartar

1/4 cup sugar

 

Frosting

1 tablespoon of ORGANO Gourmet Black Coffee powder

1 tbsp hot water

1 cup softened unsalted butter

3/4 cup powdered / icing sugar​ 

 

Preheat your oven to 350 F degrees and line a 13×9  pan with parchment paper. 

 

Whisk the egg whites in a medium bowl until frothy. Add the cream of tartar and gradually incorporate 1/4 cup of sugar while beating at high speed.

 

In another bowl, combine all the liquid ingredients (coffee, egg yolks and oil).

 

In a mixing bowl, sift and combine the flour, sugar, baking powder, the ORGANO Gourmet Black coffee powder and salt.  Add the liquid ingredients to the dry ones and mix until the batter is fluffy.  

 

With a spatula, gently fold in the egg whites mixture into the batter, once everything is incorporated, pour into the pan and tap it a few times to remove air pockets.

 

Bake in the oven for 20 minutes. Remove from oven and cool.​

 

For the Frosting, mix the hot water and the coffee and let it cool. 

In a medium bowl, beat the butter until it gets creamy, then add the icing sugar. Pour in the dissolved coffee and whisk until it gets smooth and fluffy. Once the cake is cool, spread the frosting evenly over it and smooth using a spatula.
