2nd Place:  Alba Rotundo with the King of Coffee Mousse Cake

Mousse:

350ml milk

120 gr sugar

25 gr corn starch

3 sachets of King Of Coffee

500ml cream

2 gelatin sachets

Sponge cake:

2 eggs

100 gr sugar

80 gr milk

40 gr sunflower oil

1 Sachet of OG Hot Cocoa

100 gr flour

1/2 sachet of baking powder

Syrup:

1 King of Coffee sachet

Water as required

For the mousse:

Heat the milk in a saucepan on medium.

In another saucepan, pour the sugar, cornstarch and King of Coffee and mix together. Add the hot milk while continuing to mix. Bring back to the heat and continue stirring for a few minutes until the cream thickens. Cover the saucepan with a film and leave it aside until it cools completely.

For the cocoa sponge cake

Break the eggs into a bowl and whisk with an electric mixer, add the sugar, milk, oil, flour, and unsweetened cocoa, finally half a sachet of baking powder. Prepare a hinged cake pan with the bottom lined with parchment paper. Pour the sponge cake mixture on the pan and bring to the oven at 180 ° for about 20 minutes, or in a ventilated oven at 170 ° for 20 minutes.

Prepare the syrup with a cup of King of Coffee and water.

Once the sponge cake is taken out of the oven, remove it from the pan and place it on a tray to let it cool. Soak it with the syrup with the help of a spoon, then place the ring of the hinged cake on top.

Separately, soak the gelatin in cold water. In a large bowl pour the already sweetened cream and whisk it. Pick up the cold Hot Cocoa cream that you have in the saucepan and add it to the cream, mixing with the mixer to create a soft and frothy mousse.

Put the gelatin in a saucepan with a couple of teaspoons of water, and bring it to the fire to melt it, just mix for a few seconds. Then, combine the melted jelly with the king coffee mousse and whisk again to mix well.

Take back the base of the cake and pour in the King of Coffee mousse, leveling the surface well with a spatula. Let it rest in the refrigerator for 3 hours. After the time has elapsed, remove the cake from the fridge and gently pass a knife between the cake and the pan trying to detach it from the edges. Then open the zipper and decorate the King of Coffee mousse cake to your liking.  Enjoy!!
